Nathan's brother, just younger than him, was leaving for his mission in Brazil. So we had to get those last minute family pictures. We had fun setting up the camera to the tripod at my in-law's house. Nathan and I decided to try to match, and had some flare, so we both wore vests. It was fun, and we got a couple of good couple shots. Then a week later we had Spencer's farewell, he did so well and we are so proud of him and sad that he is leaving, especially Nathan, they are biking buds :(

Forty day fast.... well sort of.
So being a newly wed, and finally settling into our new home, since we were out and about most of the summer. My mother, queen of challenges, challenged us to not eat out for a month, and she would give us $500. Being ambitious couple that we are, and trying to save money for our new family, we took her up. The only problem, is I DON'T COOK. I don't like to cook, never have, and hate going to the grocery store, nothing is more boring, than pushing a cart and going through aisle and aisle, it must be from bad experience of going to the grocery store with my mom in the small quaint town where everyone knows everyone, little did I know it served two purposes for her. 1- To feed her large family 2- Time to Socialize, get out and about and "catch up" with everyone. I just remember grocery store shopping took forever, and then she guilt trip us into carrying the groceries, by saying she paid for it, we had to bring it in, which she had every right to do so. Okay before I go into too much of a cathartic release of some of my frustrating childhood memories. I will get back to the point.
So I, non-domesticated and somewhat spoiled (YES, I will admit it). Took on the challenge, and I won't lie, it was hard. But I persevered and learn many new recipes, especially on the crock pot, they are:
- Chicken Rice casserole
- Pot Roast and potatoes
-Tortenlinni Soup
- Bean dip
- Cafe rio chicken and rice
-5 bean soup
-Shepherds pie
-Cream cheese Chicken mixture
-Carrot cake and vanilla frosting (by scratch, yep, grated carrots and all)
-red velvet cupcakes (by scratch)
-pumpkin and choc. chips cookies
-mushroom, tomato and olive oil penne pasta
And maybe we cooked these more than once.... and ate lots of cereal, sandwhiches and mac n cheese.
